Chocolate-Praline Cheesecake + Zydeco Zip

Here's one of my all time favorite cheesecake recipes. Totally decadent and divinely delicious is perhaps the only way to describe it! I had a few friends over for dinner last night and prepared this heavenly treat for dessert. The only problem with having a dessert like this around is the danger of eating a bit too much of it. I had to control myself, but I limited myself to just one piece. And as for leftovers, there were none, after my son and his friends came in and finished it off! Oh, cest bon!

Chocolate-Praline Cheesecake

Crust

3 cups graham cracker crumbs
1 stick butter, melted
1/2 cup sugar

Combine the graham cracker crumbs, melted butter, and sugar in a bowl and mix well. Press into a buttered pie pan , going half way up the sides. Bake in a preheated 350 degree oven for ten minutes and set aside to cool.

Chocolate Sauce

8 (1oz.) squares semisweet chocolate
1 tbs. butter
6 tbs.'s whipping cream

Combine all ingredients in saucepan and stir and cook over low heat, until melted and smooth. Pour half of the chocolate sauce over the graham cracker crust and spread evenly. Reserve other half for drizzling.

Filling

3 (8oz.) pkg.'s plain cream cheese
1/2 cup sugar
1 tsp. vanilla extract
3 eggs

In large bowl, combine the cream cheese, sugar, vanilla, and beat well. Add eggs, one at a time, beating well, after each addition. Pour on top of chocolate sauce layer and bake in a pre-heated 350 degree oven for 40 minutes, until slightly set. Cool and refrigerate for 2 hours, preferably overnight.

Praline Sauce

1 cup chopped pecans, divided

1 cup light brown sugar
1 small can Pet milk
2 tbs.'s butter
1 tsp. vanilla extract

Combine 1/2 cup pecans, with all of the ingredients, in saucepan. Cook and stir on low heat until blended and smooth. Drizzle warm praline sauce and warmed, reserved chocolate sauce all over cheesecake when ready to serve. Garnish with chopped pecans. Bon Appetit!! Enjoy!

Zydeco Zip

One of my bloggie friends, who is one of the best dancers I know, wants to hear a little Zydeco. Here is a clip of one of my favorite Zydeco bands, Geno Delafose and French Rockin' Boogie, playing at this year's Cajun Hot Sauce Festival. Let the Good Times Roll! This one's for you, Joe!

I have one question about this delicious cheesecake...
How do you eat just one piece?

That cheesecake looks like it may just have to come live at my house for a few hours... that is until we devour it.

I should not have looked at your blog at 8:46 a.m. when I have a dentist appointment in just two hours. Ooooh, you make me want to be bad, so very bad! That looks so heavenly. In fact, may spirits strike me down now and may I be buried in this delectable dish. :-)

The Rock-N-Bowl in the Big Easy used to have Zydeco bands on Thursday nights. you could eat all the cheesecake you wanted 'cause you would dance it off on Thursday nights!

I think you are educating me in this slowly! I keep looking out for an attractive lady wearing leopard dancing shoes - what colour eyes does she have so I could recognise her? Love the cheesecake as well. Glad you liked the giant and my poem - thanks for the visit - I will not let anyone else sit in that chair because you have sat in it ~ Eddie

Hi Marguerite
I now have enough info from your comments to my silly questions to make your character really funny character in rhyme for your part in Wizard of Oz - it will be a hoot! Thanks and you have been a very good sport. It will take some time to finish - barely started ~ Eddie ~ keep eating the shrimps!

What we say at home is “je l’ai mangĂ© des yeux” (I ate it with my eyes). I’ll make it though so I can eat it with my taste buds too! I wonder how many calories there are in one piece – 1000? Better not count.

Laura- You invite people over who will devour it, to make sure that there aren't any leftovers!

Good Cook- Thanks! That's quite a compliment, coming from you!

Mandy- Go ahead and make it! Just make sure you have guests to help.

Jeanne- Thanks! I just love all of your recipes. This cheesecake is definitely Southern.

Gypsy- Merci for your kind comment. It's a little taste of home. Glad you liked the music, too.

Katherine- You got that right, cher! If you Zydeco at the Rock n' Bowl, you could eat the whole thing and not gain an ounce!

Justin- Thanks for the nice compliment! I love your recipes, too.

Eddie- You are so funny! My eyes are green. A perfect combo of my Dad's, (blue), and my Mom's (brown).
