Parmesan Shrimp w/ Spinach & Artichokes Over Angel Hair Pasta

Here's another fabulous recipe that has made it onto "my favorites list". Truly divine, cher, and guaranteed to please your family and your guests. Start with succulent Gulf shrimp and add spinach, artichokes, and tomatoes, all in a rich lemon, buttery, garlic sauce, and serve over angel hair pasta, and top with freshly grated Parmesan cheese. Oh cest bon! Bon Appetit!


Parmesan Shrimp w/ Spinach and Artichokes Over Angel Hair Pasta

1 lb. large shrimp, peeled and deveined
1 tbs. Cajun seasoning
2 eggs, beaten, plus a little milk
1 cup flour, to dust
2 tbs.'s olive oil

2 tbs.'s butter
1 tsp. Cajun seasoning
2 cloves garlic, minced
2 cups fresh spinach, chopped
1 medium tomato, chopped
1 8 oz. jar artichoke hearts, drained
1/3 cup dry white wine
Juice of 1/2 lemon
1/4 cup fresh parsley, chopped

3/4 cup freshly grated Parmesan cheese
1 lb. package angel hair pasta, cooked and drained

 

In large bowl, season shrimp with Cajun seasoning. Place flour and eggs in two separate, shallow dishes. Dredge seasoned shrimp in flour, and then in egg mixture, and then back in flour. Place olive oil in a large nonstick skillet, on medium heat, and pan fry shrimp, for 3 minutes on each side, or until golden. Remove from skillet , set aside, and keep warm..

Add butter to skillet, then add garlic, diced tomatoes, spinach, artichokes, and parsley. Sprinkle with Cajun seasoning. Saute for 5 minutes and add white wine and lemon juice. Lower heat and simmer for 10 minutes. Mix veggie mixture with pasta, fold in shrimp, and top with Parmesan cheese. Serve with French bread and maybe a glass of wine! Cheers, cher! Sinfully good!

When I saw your recipe title, I thought, "What's not to like!" Sounds wonderful. And yes, it's a shame about Tropical Storm Bonnie's direction. We'll all be hoping and/or praying it doesn't get any stronger than they predict. sp

First Off...that recipe...THANK YOU. I have been craving something like this...really badly. Yum-O

Secondly, you are constantly in my thoughts and prayers. i will be blowing hard so this storm will divert. I will keep checking updates and PLEASE let me know that you are okay. What we do not need is anymore disaster in that area and especially where you are concerned. Batten down the hatches.

Another enticing recipe! Lovely grub. Now look, Marguerite, I have been trying to start a diet and I have been meaning to do so since 1986 because I am about 4 stones overweight, which equates to your 56 pounds. Then perhaps my feet might feel better.

With all your beautiful recipes and Lola's as well, I go straight to the kitchen to have a secret tuck in! LOL
Seriously, I am much better and I had a lovely meal with 4 lady nurse friends from my previous job. I was the only thorn amongst 4 roses! Had a great time entertaining them all but wish you were there and I then would have had eyes just for you LOL

I think your prayers were answered with Tropical Storm Bonnie-The wind shear cut it to a tropical depression.
This meal is a great kick-back, enjoy a good glass of beer or wine, type of meal.

we had gulf shrimp "burgers" with homemade tartar sauce on onion rolls - cest ce bon (wait, how do you spell that *laughing* been gone from Louisiana too long to remember!)

As for your comment on book publishing - non fiction books (and I suppose cookbooks would come under this, to!) are different in some ways from fiction, so . . .:-)

This shrimp dish sounds very tasty – I copied it. Last week I created a dish and took pictures along the way. Well, it takes a lot of time to write down every ingredient and take pictures. I now can appreciate all the hard work you do to publish posts with recipes on your blog. I don’t know if I’ll ever make a post out of my recipe – I have too many trips to write about now.
