1/2 cup seasoned bread crumbs
2 tbs.'s light mayonnaise
1 egg, beaten
1 tsp. Creole mustard
1/4 cup bell peppers, (any color), diced
1/4 cup green onions, minced
2 tbs.'s fresh parsley, chopped fine
1 tsp. minced garlic
1 tsp. Worcestershire sauce
1 tsp. or more, Creole seasoning
Combine mayonnaise, mustard, egg, parsley, Creole seasoning, Worcestershire sauce, green onions, garlic, and peppers, in large bowl. Gently fold in the breadcrumbs and crab meat, taking care not to break up the crab lumps. Form into 3 inch patties. Spray a large skillet with cooking spray or coat with 2 tbs.'s of olive oil and heat to medium high. Add crab cakes and cook for 3 to 4 minutes on each side, or until golden brown. Drain on paper towels and serve with remoulade sauce. (recipe below) Enjoy!

1/4 tsp. cayenne pepper
1/4 tsp. black pepper
1 tsp. lemon juice
Salt to taste
Few drops Tabasco
Combine all ingredients in bowl and blend thoroughly. Chill for 1 hour, before serving. Out of this world and great with any seafood.

Congrats on the well-deserved awards! The Vera Bradley shop in our village had a sale. So, I sacrificed and took a look. Next to my computer is a lovely folder with your name at the top. I needed a pretty place to put your recipes!
I have been known to eat the sauce by the spoonful. It's soooo yummy!
About self-pub - I read on a blog last year to be careful about the ISBN number and to purchase it yourself. These numbers, apparently, are registered to the first person who buys them. When bought from another, that registration has to transfer.
I wanted my chapbook to look a bit special since it's a Christmas story; thus, it's hand-stitched. It's not that much extra and I'll absorb the cost on that. I'll have a self-pub and an e-book at th same time. We're going on holiday 28 June, returning Aug 5th (tieing in with hub's biz trip) so all had to be done now.
Bought Gulf shrimp today, cheaper than marketed Texas shrimp that were smaller. So much for Don't Mess with Texas!

I love making crab cakes. I use a Chesapeake Bay recipe dating back to when we lived in VA. It requires minimal bread crumbs (just enough to hold it together), sauteed diced onion, a bit of Dijon mustard, egg, mayonnaise, Old Bay seasoning and the best part, lemon juice. I add a dash of cayenne too.
