Cajun Breakfast Casserole + Bayou Blues

Here's another Cajun breakfast dish that is always a favorite at my house and is a meal in itself! I love to cook a big breakfast on Saturday mornings, especially when it starts getting a little cooler outside. It's savory, spicy taste is just irresistible and will have you going back for seconds! It can be assembled the night before and popped into the oven in the morning. So easy and perfect for a brunch buffet, too! Cest bon, cher!

Cajun Breakfast Casserole

3 tbs.'s butter, melted

1 pkg. (10 count)  refrigerated buttermilk biscuits or homemade

1/2 lb. fresh sausage (hot or mild),  casing removed

1/2 cup each, onions and bell peppers, chopped

1/2 cup fresh mushrooms, sliced

1 jalapeno pepper, seeded and chopped

1/4 cup fresh parsley, chopped

1 tbs. Worcestershire sauce

1 cup shredded cheese (I used Colby/Jack)

6 eggs, lightly beaten

3/4 cup half n' half

1 tsp. Cajun seasoning

Salt to taste

Prepare biscuits, according to package directions. Pour melted butter into a large casserole dish to coat bottom and sides. Break biscuits into pieces on bottom of casserole dish.

Brown sausage in large skillet and drain. Add onions, bell peppers, mushrooms, and jalapeno pepper and cook on medium heat for 10 minutes, stirring often.  Add Worcestershire sauce and parsley. Stir and set aside. In large bowl, beat eggs and add Cajun seasoning. Add half and half and mix well. 

  Add the shredded cheese to the sausage mixture, mix well and spread evenly over top of biscuit layer. Pour egg mixture over the sausage/cheese mixture. Cover with foil and bake in a preheated oven for 20 minutes. Remove foil sprinkle with extra cheese, if desired,  and bake for 10 to 15 minutes more or until set. Serves 6 Bon appetit!

Tonight I will be going to a birthday bash for an old friend. We will be dining out at Artmosphere Bistro and Art Gallery and then staying for an awesome bayou blues show with Henry Gray and the Cats. Henry Gray is a Louisiana legend and has been entertaining blues fans for over 40 years! Just to give you a sneak peak,  here is a little clip that I took of him and his fabulous band, playing at Downtown Alive. Grab a cold drink, and crank it up for this one, cher! Cheers!

Blow-Out on the Bayou + Crawfish Quesadillas !

It was another fun weekend in Cajun country, packed with great food, great music, and great times! We headed over to the Blue Moon Saloon, on Sunday, for a fundraiser event and benefit dance to help out a worthy cause. NuNu's Nitelife and Cafe', in Arnaudville, La., recently suffered extensive damage from a fire and this event was held to help them rebuild. Everything was donated and all proceeds went to the cause. The place was packed and the event was a huge success.

There were 6 local bands playing, including one of my favorites, Ryan Brunet and Les Malfecteurs. They were hotter than Tabasco and the crowd was doing some nitty- gritty dancing.

There was a lot of great Cajun food, for sale, and the smell was heavenly! These pork steaks, rice dressing, and red beans were fabulous and I had a little bit of each! Ca cest bon, cher!

There was a silent auction, with work donated from local artists, and there were T-shirts and cd's for sale. I loved this painting done on a piece of cypress, but someone else had already bought it.

 

Here's a little clip that I took, in between dances, of Ryan Brunet and Les Malfecteurs. The crowd loved this band and were really cutting the rug! The wooden dance floor was vibrating and the fans, (no air conditioning) were working overtime. Really sweated off a few pounds!

We ran into some friends that told us about another fun event going on at Artmosphere, which is a restaurant, art gallery, and live music venue, and is just one block away from the Blue Moon. The Green Monkeys Foundation of Louisiana, was holding the first in a series of "Deep South Sundays", with Cajun dance lessons, a booray card game, and live music, all in an effort to preserve our Cajun culture. We couldn't resist checking it out!

Corey Ledet and His Zydeco Band were just taking the stage, but I needed a little break.

These Cajun gals were having a blast!

I ordered a Lemon Basil Martini and sat back and listened to the music for a while. The aroma coming from the kitchen was wonderful and I asked to see a menu.

After all that dancing, I was starting to get hungry again. I decided to order one of my favorite items on the menu, the Crawfish Quesadillas. Cest bon! Divine, cher! For my recipe on how to make this succulent creation at home, click here.

Spicy Grilled Catfish & Shrimp + Fun on the Bayou

Here's a great quick and easy recipe that is a favorite at my house, and is perfect for those warm summer evenings. So light and healthy, too! One bite of this scrumptious dish will send you into orbit, cher! Oh, cest bon! If you can't get catfish, in your area, your favorite fish can be substituted. Enjoy!

Spicy Grilled Catfish and Shrimp 

4 large catfish fillets
1 lb. large shrimp (peeled and deveined)
1 tbs. blackened fish seasoning
1 tbs. Cajun seasoning
1 tsp. dried thyme
Juice of one lemon

 


Squeeze lemon juice on both sides of fish and shrimp. Combine seasonings and sprinkle seasoning mix on the fish and shrimp, to coat both sides. Cover and refrigerate for 15 minutes.

Place seasoned shrimp in an oiled grill pan, and baste and grill for 5 to 7 minutes on each side. Place seasoned catfish (top side down) in an oiled grill pan.  Grill on medium for 10 to 12 minutes. Flip and baste and grill for 10 to 12 more minutes, or until fish flakes with a fork. Oh cest bon, cher! Serve with steamed broccoli and garlic bread. Le bon manger!

Fun on the Bayou

It was another great Cajun weekend, with lots going on and plenty of fun to be had! On Saturday night, we went to Artmosphere, a combination art gallery, restaurant/ bar, hookah lounge, and live music venue, in downtown Lafayette. David Egan and the Twenty Years of Trouble Band were rockin' the crowd!

There was a whole lotta rockin' and rollin' going on!

After dancing for a while, we ordered one of these sinfully delicious pizzas! Divine!

The walls are always filled with such interesting art. These caught my eye.

Bayou Blues Jam at Artmosphere

We had an absolute blast at

Artmosphere Bistro last night, where they have a Jazz/Blues Jam every Thursday night. The place is well known for it's nightly music, great food, awesome art and chocolate martinis. Artmosphere is a combination art gallery, restaurant, and live music venue, as well as a great spot to catch beads during Mardi Gras season. I have company from Maryland, this week, and wanted to give them a taste of our talented blues musicians.

My son and daughter met us there and it was starting to become quite a party. After adjusting to the darkness, I looked around the cozy bar area and saw several people waving at me. Oh my gosh, it was a group of friends from good old Abbeville who I had gone to high school with, that I hadn't seen in ages. Well, the party began turning into an Abbeville reunion, as one friend pointed out that most of the band members were also friends from Abbeville.

An old family friend told me that his son was up next to play in the jam. Then my son told me that one of his friends was about to play, as well. It turned out that our sons were friends and neither realized that their parents were old friends. Talk about synchronicity! The music was hot, as always, in Cajun Country and seeing my old buds was icing on the cake. Lassier les bon ton rouler, cher!
