Nanny's Pumpkin Muffins + Festival Preview

With a rainy morning, here in Cajun Country, I'm in the mood to bake something yummy, but not too high in calories. Here is one of my many favorite pumpkin recipes. It was my dear Godmother's recipe, so you know it's got to be good! Nanny loved to bake and it was her "gift", and she would delight everyone she knew with her delectable baked goods. Since I love all things pumpkin in the fall, I kinda go nuts and make them all. It's as if, suddenly, I can't get enough of this delicate, wonderful flavor, especially in desserts! Pumpkin muffins, pumpkin bread, pumpkin pie, pumpkin cookies, pumpkin cake, pumpkin pancakes, and have you ever had pumpkin cheesecake? Oh cest bon, cher! Stay tuned for more pumpkin recipes.... and Happy Baking!!

1/2 cup sugar
2 tsp.'s baking powder
1/2 tsp. salt
1/2 tsp. each, ground cinnamon and nutmeg
a sprinkling of ground cloves
1/2 cup buttermilk or milk
1/2 cup canned pumpkin
1/4 cup melted butter
1 large egg
1/2 cup chopped pecans
1/2 cup raisins, (optional)

Preheat oven to 350 degrees.Grease 12 muffin cups or use paper liners. Mix all ingredients, until just mixed. Fold in pecans and raisins and stir gently.

Bake at 350 degrees for 20 to 25 minutes or until toothpick comes out clean. Serve with your favorite coffee or tea and enjoy! Of course, if you're not counting calories, you could add a little cream cheese frosting to these, just for an extra sweet touch. Makes 12 muffins.

The Lost Bayou Ramblers at Festival Acadiens

With Festival Acadiens et Creole only 4 days away, I'd like to give ya'll a little preview of The Lost Bayou Ramblers, one of my favorite bands that will be playing again, at this year's festival. (October 9-11) This video was taken a few years ago, but really captures the highly seasoned spirit of the Cajun music and people. Let the good times roll, cher!!! Crank it up, ya'll!
