Grilled Stuffed Jalapenos + Cajun Tailgating Fun

We had an absolute bon' ton' at the Ragin' Cajuns tailgating party on Saturday! The stage was set at Cajun Field for an afternoon of pure indulgence in the best tailgating food than you could ever imagine. As far as the eye could see, there were Cajun men everywhere, grilling and frying up their best stuff and cooking succulent side dishes, jambalaya, and gumbo, too. It was a bit warm and humid, and by the time I made my way around the huge tailgating area, I was working up quite a sweat! And getting full too, as I was offered a taste and a beer at each grill, but had to stop eating and switch to water, half way through!  It was a blast! Here were a few of my favorites.







This guy was grilling some Andouille sausage and boudin. Cest bon, cher!





This one was frying some chicken wings and they were finger lickin' good!









This one was grilling some huge steaks and the smell was making my mouth water. To die for, cher!









These two guys were cooking a chicken and sausage gumbo and some smothered potatoes. Both were out of this world!







These two were grilling up a big batch of wings with this pork jambalaya on the side. Divine!










And last, but not least,  were these sinfully delicious grilled, stuffed jalapenos and some fresh pork sausage!

These two guys were kind enough to share the recipe with me. So quick and easy, too.
Warning: These are addictive! Fabulous!

Grilled Stuffed Jalapenos
12 large jalapenos, seeded and cut in half
1 lb. bacon, cut in thirds
4 ounces cream cheese
4 ounces of grated pepper jack cheese
1 tsp. minced garlic
1/4 cup onions, chopped fine
Salt to taste

Combine the cream cheese, shredded cheese, onions,  and salt in a medium sized bowl. Mix well. Fill the jalapenos and wrap each one with a bacon strip. Secure with toothpicks.  Grill on medium hot grill for about 10 to 12 minutes,  or until bacon is crisp.
Hot, spicy, and so delicious! Bon Appetit!

Tailgating Fun - Cajun Style!




















What a blast we had on Saturday, tailgating at the U.L.L. (University of Louisiana at Lafayette ) homecoming game, in Lafayette. (also, my alma mater and my daughter's) Cajun Field played host to 21,000 Ragin' Cajuns fans decked out in red and hot peppers and cooking up a storm.
 
The Krewe Des Amis tent was my favorite, by far! Dynamite, food, decorating, and music!

When I tell you that these Cajuns know how to throw a tailgating party like nothing you've ever seen......... And Lawd have mercy, cher, there was some good eating at Cajun Field today! This guy was grilling up some crab-stuffed mushrooms and boudin. Both, out of this world!!!

And what's a Cajun party without some fabulous live Cajun music provided by Jamie Bergeron and the Kickin' Cajuns. This is one tight band that blew the roof off the place with their high energy tunes. Let the good times roll, cher!

So, I danced for the rest of the time. But at least you can get an idea of the fun!

A beautiful day, well spent with friends and family, enjoying great food and music, supporting our team. Does life get any better than that? What did you do for fun, this weekend?

Time to Tailgate!


With Fall in the air and college football in full swing, it's time to plan your tailgating parties. It's all about family, friends, food, and football and having fun while making sure that everyone enjoys a feast before the big game. It's pre-game, halftime, post-game and just as popular, in homes, in front of the tube, as it is on college stadium parking lots. It's a great big celebration and tailgating has become a national obsession and it seems that there is no end to it's popularity. It has really turned into a whole industry with it's own cookbooks and catering and supply services. If you've ever been to a tailgating party in South Louisiana, you know that it's a party like no other. The top five tailgating recipes in Cajun country, for The Ragin' Cajuns and L.S.U., for the 2008 season are:

1. Hot and Spicy Barbeque Wings and Ribs
2. Cajun Jambalaya
3. Ragin' Cajun Burgers
4. South of the Border Chili
5. L.S.U. Gumbo

The secret that gives these wonderfully delicious burgers their zip is the Tabasco, horseradish, garlic blend. This combo really makes you want to drink an iced cold beer or two. Cheers, cher!

Ragin' Cajun Burgers


3 lbs. lean ground beef or turkey
2 tbs.'s Tabasco sauce
2 tbs.'s horseradish
2 tbs.'s minced garlic
2 tbs.'s Worcestershire sauce
2 tsp.'s salt
2 tsp.'s freshly ground black pepper
6 good burger buns

3 tbs.'s butter, melted

Place meat and all other ingredients in large bowl and mix gently, but thoroughly. Shape meat mixture into 6 patties and cover with foil and chill for one or more hours. (of course you can make smaller burgers if your appetite is not voracious or you do not have several young men over 6 ft. tall in your house) Preheat gas grill on medium- high heat or charcoal grill on medium- high and cook for 7 to 10 minutes on each side, for medium. Baste buns with melted butter and grill to the side for 5 minutes to toast. Garnish with lettuce, tomato, onions, and pickles and enjoy, cher! Ca cest bon!!!
