Loaded Baked Potato Salad
3 lbs. red potatoes, peeled and cubed
4 hard cooked eggs, chopped
1/2 lb. bacon, cooked and crumbled
1 cup shredded cheddar cheese
1 bunch green onions, sliced
2 dill pickles, diced
3/4 cup light sour cream
1/2 cup light mayonnaise
2 tbs.'s Creole mustard
1 tablespoon Cajun seasoning
Salt to taste
Few shakes of Tabasco
Place potatoes in a large pot and cover with water. Add 1 tsp. salt and bring to a boil and boil for 15 minutes. Drain and place in a large bowl and allow to cool. Sprinkle with Cajun seasoning.
Combine the eggs, bacon, cheese, green onions, and pickles.
Add to the potatoes and mix well.
Combine the sour cream, mayonnaise, and mustard, add a few shakes of Tabasco, and mix well. Spread over potato mixture and toss to coat and cover and chill until ready to serve. Garnish with green onions and bacon pieces. FAB!

oh my goodness....you keep making better and better food and menus..I think it would just be easier to head on down to LA and join in your party..this looks so good Marguerite....will have to especially make the potato salad...have a great fourth of July..

I'm moving next door to you! All of these look really good. I'm a bit of a potato salad snob. There are hundreds of different versions and I like only about 3 of the many I've tried. Your PS dish, looks like something I would love! Have a good time!
What a fab 4th July feast! All looks truly scrumptuous. I am told that there is a fab drink in your neck of the woods called a Margarita which seems to have magical properties. So strong that it is as if someone had added sleeping pills to it and the recipient cannot remember a thing. What is the drink? Could you give us the recipe please?
