Sinsational Cajun Sides !

Here is my favorite" no fail" potato salad recipe. It is my mother's recipe that everyone loves and requests over and over, again. It's so simple, but oh so good! Moi-J'aime-ca-Comme-Ca! (I like it like that)

Deviled Egg Potato Salad

5 lb.'s red potatoes, peeled and chopped
1 tbs. white vinegar
10 eggs

2 tbs.'s sweet pickle relish w/juice
5 tbs.'s mayo (more, if needed)
2 tbs.'s yellow mustard
1 tbs. Creole or Cajun seasoning
Salt to taste
Few shakes Tabasco

Fill a large pot with water (3/4) full and add the salt, vinegar, chopped potatoes, and eggs. Bring to a boil and boil for 15 minutes or until potatoes are tender. Drain and cool, and season potatoes with the Cajun seasoning and place in a large bowl. Meanwhile, peel eggs and separate egg whites from yolks. Chop egg whites and add to potatoes. Place yolks in a medium bowl and mash yolks with a fork until fine. Combine mayo, mustard, salt, pickle relish, and Tabasco in small bowl and mix well, then add to the mashed yolks and stir, adding a little more mayo, until the desired consistency is reached. Add to the potatoes, blending gently. Ca cest bon, cher!!!

This just might be the best corn on the cob recipe of all time. The delectable spicy Cajun butter brings this vegetable up to a new level. Out of this world!! Bon Appetit, cher!!!

Cajun Grilled Corn on the Cob w/ Cajun Butter

First, make the Cajun butter.

1 stick butter, melted
1/2  tsp. cayenne pepper
Salt to taste (I use 1 tsp.)
1 tsp. crushed red pepper flakes
1 tbs. each, chopped fresh basil, and parsley
1 tbs. minced garlic
1 tsp. Worcestershire sauce

Combine all in small bowl and set aside.

Shuck 6 ears of corn, wash, and lay out 6 sheets of 12x12 inch heavy duty foil. Place each ear of corn on a piece of foil and baste each with Cajun butter. Roll each ear in foil, folding ends over. Place on top shelf of a medium hot grill and grill for about 10 minutes or until corn makes a crackling sound. Turn over and grill for 10 more minutes. Divinely delicious!! Cest bon, cher!

Grilled Bacon Wrapped Shrimp w/ Spicy Cajun Sauce

With the summer in full swing here in Cajun country, I love to cook dinner out on the patio, on the grill most every evening. Grilling is so quick and easy that you can whip up the whole meal from the entree right down to the sides and bread in a half an hour or less. Plus it keeps the heat out of the kitchen.  Gulf shrimp wrapped with bacon, and basted in  a spicy chipotle-garlic sauce, Cest bon, cher! Enjoy!

Grilled Bacon Wrapped Shrimp w/Spicy Cajun Sauce

1 pound large (24 count) shrimp
12 slices of bacon
Salt and pepper to taste
1/2  cup honey
1/2 cup Hickory Smoke BBQ sauce
1 tbs. Creole mustard

Season shrimp with salt and pepper. Wrap 1/2 slice of bacon around shrimp securing it with a toothpick and place shrimp on skewers and set aside.

Combine all other ingredients in a sauce pan and simmer for 5 minutes. Keep warm until ready to use.

Place skewers on a pre-heated medium grill and baste with sauce and grill for 3 minutes. Flip skewers and baste again and cook for 3 more minutes. Serve with extra sauce for dipping. Fab!

Serve with my Cajun Grilled Corn on the Cob

And my Creole Garden Pasta Salad

And maybe a Cajun Margarita or two...

A Cajun Waltz

Here's a little clip of the crowd enjoying a Cajun waltz played by Jamie Bergeron and the Kickin' Cajuns at the weekly Sunday afternoon dance at Whiskey River Landing in Henderson. We'll be headed out to the Atchafalaya Basin tomorrow for a little Cajun fun on the swamp and dancin' at Whiskey River dance hall. Let the good times roll, cher!

A Real and Virtual Blast + French Rockin' Boogie !

First, I'd like to extend a warm welcome to all of my new followers! Thanks so much for coming by and for all of your lovely comments! The weekend was an absolute blast, on the swamp, and at the virtual bloggie BBQ , hosted by Karen G. She was the hostess with the mostess, and did an excellent job of making everyone feel at home with her warm, Southern-like hospitality. Thanks again, Karen, for a great party! I hereby pronounce you and all of my followers, "Honorary Cajuns"! All that is required to become an honorary Cajun is to love the Cajun food and music! Welcome to Cajun country! Lassiez les bon temps rouler!
******************************************************************************************
We spent two days at a friend's camp in Henderson, Louisiana on the beautiful Atchafalaya Basin, better known as the Henderson Swamp. There is no end to the fun that one might find on the levee, on any given weekend, and this past weekend was no exception. We started out at Basin Landing for a few cold ones at Turtle's Bar.

It was a beautiful day on the water, cooler and sunny, and less humid than usual. The boaters were out in full force. This party barge was really rockin'!

We had a sinful lunch at Pat's Restaurant. I couldn't resist having an oyster poboy.

There was a whole lotta grilling going on, with all of the trimmings, too! Le bon manger!

I made a big pot of Cajun rice dressing and a bowl of Creole potato salad.

On Sunday, we headed over to the Sunday afternoon dance, at Whiskey River Landing.

The place was packed to the gills and the crowd was really boogie-ing down to the spicy sounds of Geno Delafose and French Rockin' Boogie! One of my favorite bands and so much fun!
****************************************************************************************************

Here's a little clip that I took of this very popular band, movin' the crowd! The crowd was going wild and the dance floor was very crowded! But, my camera's batteries went out just when the patrons were starting to dance ON the bar! I'll make sure to get one, next time! You can catch some more of my music videos on Youtube @ TheBayougirl. Crank it up for this one, cher, and let the good times, roll!
