Cajun Super Bowl Faves

It's almost time for the Super Bowl and I've been putting the finishing touches on my party menu. Here's a super quick and easy dip that I'm planning on serving since it is a favorite at my house. Made with Parmesan cheese and a good amount of heat, it's perfect for watching the big game or anytime you want a sinfully delicious treat. You will not be able to stop eating it and it's guaranteed to be a big hit with your family and guests, so you might want to double the recipe. Cest' bon, cher! Enjoy!

Jalapeno Cheese Dip #2

2 (8 ounce) pkg.'s cream cheese, softened
1 cup mayo
1 (4 ounce) can chopped green chilies, drained
1 (4 ounce) can diced jalapenos, drained
1 cup grated Parmesan cheese
1/2 cup green onions, sliced thin

Stir together the cream cheese and mayo until smooth. Stir in the chilies and peppers. Spread mixture into a lightly greased 8"x 8" baking dish. Sprinkle top with cheese and green onions.

Bake in a 350 degree oven for about 30 minutes and serve with toasted baguettes or your favorite chips or crackers.

Cajun Memorial Day Faves


With Memorial Day coming right up, I've been going through my summer recipes and trying to decide what this year's menu will include. I usually just ask my family what they would like and go from there. We'll be firing up the grill for a "kick off to summer bash" and here are a few of the many recipes that are on this year's "must have" list for our family holiday cook out. Enjoy!


Creole Bloody Marys (for starters)

1 cup vodka
4 cups tomato juice, chilled
2 tbs.'s lemon juice
2 tbs.'s Worcestershire sauce
2 tbs.'s horseradish
Tabasco to taste
Few shakes of celery salt
Celery sticks for garnish

Combine all ingredients in blender and blend until well combined. Serve over ice and garnish with celery sticks. Cheers, cher!

 Creamy Crawfish Dip

 



 Strawberry Lemonade

1 (1/2) cups sugar
4 cups water
2 cups fresh strawberries, hulled, washed, and cut in half
1 cup lemon juice, 4 large lemons

Combine 1 cup sugar and 1 cup water in small saucepan and cook and stir on medium heat until dissolved. Set aside to cool.

Combine the remaining 3 cups water, 1/2 cup sugar, and the strawberries in blender and blend until smooth. Transfer to a 2 quart pitcher and add cooled sugar mixture and lemon juice. Stir well and add crushed ice. Garnish with lemon slices and strawberries.

 

Spicy Cajun Grilled Chicken

Mardi Gras Slaw











 Bayou Bourbon Beans










Bourbon BBQ Sauce

1/2 cup brown sugar
1/2 cup bourbon
1 cup ketchup
1/2 cup cane syrup
2 tbs.'s Creole or Dijon mustard
1 tbs. Liquid Smoke
1 tbs. or more, chipotle sauce
2 cloves garlic, minced
3 tbs.'s onion, minced
Salt and Tabasco to taste

Combine bourbon and sugar in saucepan and heat and stir on medium heat, until sugar melts.  Add remaining ingredients and simmer for 15 minutes, stirring frequently. Add a little water, if needed. Use as a basting sauce and make extra for dipping.

Cajun Mother's Day Buffet + A Cajun Waltz

It's finally Mother's Day and my wonderful son is whipping up a scrumptious lunch buffet for me and some other family members and friends. He's including my faves and will be boiling some crawfish on the patio, too. Here is what's on the menu so far. It's a beautiful, sunny day and I am really looking forward to it. A Cajun Waltz

Here's a little clip that my friend Bill took recently, of a Cajun waltz at the Saturday morning dance at Fred's Lounge in Mamou, Louisiana. Don Fotenot and Les Amis de Louisiane were entertaining the crowd. The weekly dance is a tradition in the area and packs them in at 8 am.! Oh, the life of a Cajun!

Time For The Crawfish Festival + Cajun Crawfish Dip

Ready or not, it's Crawfish Festival time. And am I EVER ready to eat some of the spiciest, best crawfish in the state and the world. Dubbed the "Crawfish Capital of the World" by the Louisiana State Legislature in 1959, Breaux Bridge, La. will host the 49th annual Crawfish Festival from May 1 thru May 3, 09'. What started out as a small hometown festival in downtown Breaux Bridge, over 40 years ago, has grown into a huge three day event that plays host to over 25,000 festival goers from around the state, the country, and the globe. There will be crawfish prepared in countless ways, including boiled, fried, etoufee, poboys, jambalaya, boudin, pies, pistolettes, bisque, and more. Plus three music stages with great acts like Steve Riley and the Mamou Playboys, Jamie Bergeron and the Kickin' Cajuns, Nathan Abshire and Zydeco Cha Chas and many more favorites. Cajun Crawfish Dip

1/2 cup butter
1/2 cup each onions, bell pepper, and celery, diced
1 tsp. crushed garlic
1 tsp. Cajun seasoning
1/2 tsp. cayenne pepper
1 tsp. paprika
4 tbs.'s white wine
2 tbs.'s seafood stock or clam juice
Salt to taste
1 lb. cream cheese, cut into small pieces
2 lbs. peeled crawfish tails
1/4 cup each fresh parsley and green onions, chopped

Melt butter in medium saucepan on medium high heat. Add onions, bell pepper, and celery and saute' for 5 minutes. Add Cajun seasoning, cayenne pepper, paprika, and garlic and stir well. Stir in white wine and seafood stock, and reduce heat to low. Add crawfish tails and salt and mix well and cover and simmer for 20 minutes. Gradually add cream cheese until melted, stirring often and cook for 5 minutes. Add green onions and parsley and a little more white wine if mixture is too thick. Transfer to a dip bowl and serve with pastry shells. Makes 2 quarts. Sinfully delicious! Enjoy!
