Bayou Buffalo Wings w/ Blue Cheese Dip + Festival Fun

Here's a fabulous Cajun appetizer that will rock your socks off and have you sipping a cold drink or two. The spicy, hot sauce combined with these succulent chicken wings makes for a perfect addition to any party or occasion. You might want to double the batch, as they are so easy to make and baked for a healthier version. Bon appetit! Enjoy!

 Bayou Buffalo Wings

3 lbs. chicken wings
1 tsp. vegetable oil 
1 small onion, minced
3 cloves garlic, minced
1/2 cup chili sauce
1/2 cup cane syrup
1/4 cup apple cider vinegar
1 tbs. or more, Tabasco sauce
1 tbs. prepared horseradish
1 tsp. liquid smoke
1 tsp. chili powder
Cajun seasoning to taste


Remove wing tips from wings and place in a large bowl and season with Cajun seasoning.

Heat oil in large, heavy pot and cook onion and garlic for 5 minutes or until soft. Stir in chili sauce, cane syrup, vinegar, hot sauce, horseradish, liquid smoke, and chili powder. Over medium heat, cook for 5 minutes,until bubbly. Allow to cool.


Pour half of the sauce over wings, to coat, and cover and refrigerate overnight. Drain sauce and discard. Arrange wings on a baking sheet lined with heavy duty aluminum foil and bake in a preheated 400 degree oven for 10 minutes on each side.

  
Meanwhile, bring other half of sauce to a boil and boil for 1 minute, reserving some for dipping, if desired. Brush half of the remaining sauce over wings and continue baking for 10 more minutes. Turn and brush with remaining sauce and bake for 10 more minutes or until no longer pink inside.


Serve with my Smoky Blue Cheese Dip and a cold beer. Enjoy!

Smoky Blue Cheese Dip

1/2 cup blue cheese, crumbled
3 strips smoked bacon, cooked, drained, and crumbled
1/2 cup light mayo
4 tbs.'s low fat buttermilk
4 tbs.'s light sour cream
1/4 cup green onions, chopped fine
1 tsp.apple cider vinegar
1/4 tsp. cayenne pepper
1/4 tsp. black pepper
Salt and Tabasco to taste

Combine all ingredients in mixing bowl and whisk until well blended. Chill for 1 hour.

Festival Fun

We had an absolute blast at Festival International de Louisiane in Downtown Lafayette.  Six stages of fantastic music, dozens of sinfully delicious,  food booths, and an awesome International arts and crafts show, were a few of the many attractions that made this festival fun and fabulous!

Cajun Memorial Day Faves


With Memorial Day coming right up, I've been going through my summer recipes and trying to decide what this year's menu will include. I usually just ask my family what they would like and go from there. We'll be firing up the grill for a "kick off to summer bash" and here are a few of the many recipes that are on this year's "must have" list for our family holiday cook out. Enjoy!


Creole Bloody Marys (for starters)

1 cup vodka
4 cups tomato juice, chilled
2 tbs.'s lemon juice
2 tbs.'s Worcestershire sauce
2 tbs.'s horseradish
Tabasco to taste
Few shakes of celery salt
Celery sticks for garnish

Combine all ingredients in blender and blend until well combined. Serve over ice and garnish with celery sticks. Cheers, cher!

 Creamy Crawfish Dip

 



 Strawberry Lemonade

1 (1/2) cups sugar
4 cups water
2 cups fresh strawberries, hulled, washed, and cut in half
1 cup lemon juice, 4 large lemons

Combine 1 cup sugar and 1 cup water in small saucepan and cook and stir on medium heat until dissolved. Set aside to cool.

Combine the remaining 3 cups water, 1/2 cup sugar, and the strawberries in blender and blend until smooth. Transfer to a 2 quart pitcher and add cooled sugar mixture and lemon juice. Stir well and add crushed ice. Garnish with lemon slices and strawberries.

 

Spicy Cajun Grilled Chicken

 Bayou Bourbon Beans










Bourbon BBQ Sauce

1/2 cup brown sugar
1/2 cup bourbon
1 cup ketchup
1/2 cup cane syrup
2 tbs.'s Creole or Dijon mustard
1 tbs. Liquid Smoke
1 tbs. or more, chipotle sauce
2 cloves garlic, minced
3 tbs.'s onion, minced
Salt and Tabasco to taste

Combine bourbon and sugar in saucepan and heat and stir on medium heat, until sugar melts.  Add remaining ingredients and simmer for 15 minutes, stirring frequently. Add a little water, if needed. Use as a basting sauce and make extra for dipping.

Cajun Fourth of July Favorites

Almost time for one of my favorite holidays and I've been tweaking my menu and planning our annual Fourth of July cookout. It's supposed to be hot and humid, so this will definitely be a poolside bash. And this is what I have on the menu, so far, and who knows what else I'll be adding! Plus, we'll be boiling some fabulous Spicy Cajun Boiled Crabs, since crab season is in full swing here in Cajun country. And when I tell you that it's all out of this world, then you know that I mean it, cher!  Bon appetit!

Cajun Jalapeno Cheeseburgers

2 lbs. lean ground beef
1 tbs. Tabasco sauce
1 tbs. liquid smoke
2 tbs.'s minced garlic
1 tbs. prepared horseradish
1 bunch green onions, including tops, chopped 
1 tbs. Worcestershire sauce
2 tsp.'s salt
2 jalapenos, sliced
8 slices cheddar cheese

Melted butter
Hamburger buns

Place beef in large bowl and add all other burger ingredients, except jalapenos and cheese. Mix gently and form into 8 (1/4 lb.each) patties. Place one pattie on a plate and layer with jalapenos and cheese slice.  Top with another pattie and seal edges together. Grill directly on a medium hot grill for about 10 to 15 minutes on each side. Brush buns with melted butter and grill on indirect heat until toasted, while burgers are cooking. Garnish with your favorite hamburger fixins. FAB! Makes 4 (1/2) pound burgers.

 Strawberry Lemonade

1 (1/2) cups sugar

Frozen Pina Coladas (my favorite)

1 1/2 oz. light rum
2 oz. cream of coconut
4 oz. pineapple juice
1 cup fresh frozen pineapple chunks
1 cup crushed ice

Place all ingredients in blender and blend until smooth and creamy! Serve in your favorite cocktail glass and garnish with a pineapple wedge.

Cajun Super Bowl Party Buffet

It's almost time for Super Bowl Sunday and I've been tweaking my party buffet menu and making sure that my guests won't leave hungry. This is what I have so far and I'm sure that I'll be adding more as I go along. These are all scrumptious and are perfect for watching the big game. Guaranteed to please your family and guests, cher! Cajun Seven Layer Taco Dip

1 package taco seasoning
1 (16 oz) can refried beans
1 (8 oz) package cream cheese, softened
1 (16 oz) container sour cream
1 (16 oz) jar salsa
1 large tomato, chopped
1 green bell pepper, chopped
1 bunch green onions, chopped

1/2 cup pickled jalapeno slices
1 (6 oz) can sliced black olives, drained
2 cups shredded Cheddar cheese 



In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter. Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans. Top the layers with salsa and cheese. Place a layer of tomato, green bell pepper, green onions, jalapenos, and black olives over the salsa and cheese layer. Serve with tortilla chips.

Spicy Crawfish Beignets w/ Remoulade Sauce

1 lb crawfish tails
1/4 cup each, celery,
red bell pepper,
green bell pepper, and
onion, diced
1 bunch green onion, sliced thin
4 cups all purpose flour
3 tbs.'s baking powder
2 (12oz) bottles of your favorite beer
3 eggs, beaten
4 tbs.'s dry crab boil
2 strips bacon, chopped

Combine all dry ingredients and mix well. Wisk in beer then eggs till slightly lumpy. Fold in vegetables, bacon, and crawfish.

Allow to sit for a few minutes. In deep fryer, drop small spoonfuls in to 350 degree frying oil. Cook for about 3 to 4 minutes making sure to turn occasionally. Remove and let drain on paper towels. Serve with Spicy Remoulade Sauce. Click here for the recipe.

Cajun Christmas Party Preview

Well, it's only 2 weeks till Christmas, ya'll, so I am planning my holiday party menus.  I'll soon be entertaining guests for a gift exchange party and then again on Christmas Eve. I've decided to liven up the menu with some new spicy appetizers and I'll be adding several fabulous seafood dishes to my Christmas Eve buffet, as well. This is what I have so far and they are all sinfully delicious and are sure to please your family and guests. Desserts will be on a separate post. Cest bon, cher! Bon appetit!

Spicy Creole Crab Balls

1 lb. lump crabmeat, picked over
1/2 cup crushed saltine crackers
1 large egg
1/4 cup mayo
1 tsp. Creole seasoning
1 tsp. Worcestershire sauce
1 tsp. Creole or Dijon mustard
2 tbs.'s chopped bell pepper
2 tbs.'s chopped green onions
Vegetable oil for frying

In a large mixing bowl, mix together the egg mayo, Creole seasoning Worcestershire sauce, and Creole mustard. Add crabmeat and mix gently. Add cracker crumbs evenly. Stir in the peppers and green onions. Form the mixture into 3 inch balls. ( I used a melon scoop) and place on a large cookie sheet and chill for 1 hour. Deep fry at 350 degrees for 2 to 3 minutes or until golden brown. Drain on paper towels and transfer to a serving platter. Serve with my Creole Tartar Sauce. Fab!

Cajun Super Bowl Faves

It's almost time for the Super Bowl and I've been putting the finishing touches on my party menu. Here's a super quick and easy dip that I'm planning on serving since it is a favorite at my house. Made with Parmesan cheese and a good amount of heat, it's perfect for watching the big game or anytime you want a sinfully delicious treat. You will not be able to stop eating it and it's guaranteed to be a big hit with your family and guests, so you might want to double the recipe. Cest' bon, cher! Enjoy!

Jalapeno Cheese Dip #2

2 (8 ounce) pkg.'s cream cheese, softened
1 cup mayo
1 (4 ounce) can chopped green chilies, drained
1 (4 ounce) can diced jalapenos, drained
1 cup grated Parmesan cheese
1/2 cup green onions, sliced thin

Stir together the cream cheese and mayo until smooth. Stir in the chilies and peppers. Spread mixture into a lightly greased 8"x 8" baking dish. Sprinkle top with cheese and green onions.

Bake in a 350 degree oven for about 30 minutes and serve with toasted baguettes or your favorite chips or crackers.
